Canephora, often known as Robusta, finds a new expression at the Beforest's Poomaale Collective in Coorg, where coffee is grown not in isolation, but within a thriving forest landscape. Here, biodiversity shapes the crop, allowing the beans to develop depth beyond conventional robusta profiles.
Unlike mass-produced robusta grown for strength alone, this coffee is cultivated in living soils under forest shade - bringing clarity and complexity to a species long undervalued for quality.
After harvest, the cherries undergo anoxic fermentation - a carefully controlled oxygen-free process that allows natural microbes to slowly transform the sugars within the fruit. This enhances texture, refines bitterness, and introduces layered aromatic character.
The beans are then medium roasted to balance body with subtle nuance - resulting in a cup that feels structured, smooth, and quietly expressive rather than harsh or overpowering.
