COCONUT MILK RED RICE PORRIDGE

Ingredients: 

  • Raw Red Rice – ¼ cup
  • Red Cowpeas – ¼ cup (soaked overnight)
  • Coconut Milk – 2 cups
  • Water – ½ cup (adjust if needed)
  • Salt – to taste 


   Method:

  •   Soak the red cowpeas overnight.
  • Wash and drain the red rice.
  • In a pressure cooker, cook the rice with coconut milk(1.5 cup) for 1 whistle.
  • Add soaked cowpeas and a little water if needed.
  • Pressure cook for 2–3 whistles until soft.
  • Add salt and bring to a gentle boil.
  • Add coconut milk(¼ cup), mix, and switch off the flame once it starts to simmer.
