COCONUT MILK RED RICE PORRIDGE

Ingredients:
- Raw Red Rice – ¼ cup
- Red Cowpeas – ¼ cup (soaked overnight)
- Coconut Milk – 2 cups
- Water – ½ cup (adjust if needed)
- Salt – to taste
Method:
- Soak the red cowpeas overnight.
- Wash and drain the red rice.
- In a pressure cooker, cook the rice with coconut milk(1.5 cup) for 1 whistle.
- Add soaked cowpeas and a little water if needed.
- Pressure cook for 2–3 whistles until soft.
- Add salt and bring to a gentle boil.

Add coconut milk(¼ cup), mix, and switch off the flame once it starts to simmer.
