Ingredients
- Bewild Mapillai samba rice -1 cup
- Water (hot) - 4 cups
- Salt to taste (optional)
Cooking Time
- 30 - 40 min
Method: Traditional open vessel
- Wash Mappillai Samba rice 2-3 times with regular water.
- Soak washed rice in hot water overnight or at least 6-8 hours in a 1:4 rice-to-water ratio.
- In the morning, strain the rice-soaked water and additionally add 2 cups of water (total 6 cups & 1:6 rice-to-water ratio for cooking). Bring it to a boil. Once the water starts boiling, add the soaked Mappillai Samba rice to it.
- Check the rice texture after 20 minutes of cooking. The rice takes 30-40 minutes to cook completely.
- Once cooked, turn off the flame and strain the excess water.
- Let it rest for 5 minutes and serve with your favourite curries, chutneys or dals.
