Ingredients

  • Bewild Mapillai samba rice -1 cup
  • Water (hot) - 4 cups
  • Salt to taste (optional)

Cooking Time

  • 30 - 40 min 

Method: Traditional open vessel

  • Rinse Mappillai Samba Rice 2–3 times with regular water.
  • Soak the rinsed rice in hot water overnight, or for at least 6–8 hours, using a 1:4 rice-to-water ratio.
  • In the morning, strain the soaking water and add 2 more cups of fresh water (totaling 6 cups, making it a 1:6 rice-to-water ratio for cooking).
  • Bring the water to a boil. Once it starts boiling, add the soaked Mappillai Samba Rice.
  • Check the texture after 20 minutes. The rice typically takes 30–40 minutes to cook completely.
  • Once cooked, turn off the heat and strain any excess water.
  • Let the rice rest for 5 minutes before serving with your favourite curries, chutneys, or dals.
