  • Bewild Mapillai samba rice -1 cup
  • Water (hot) - 4 cups
  • Salt to taste (optional)

Cooking Time

  • 30 - 40 min 

Method: Traditional open vessel

  • Wash Mappillai Samba rice 2-3 times with regular water.
  • Soak washed rice in hot water overnight or at least 6-8 hours in a 1:4 rice-to-water ratio. 
  • In the morning, strain the rice-soaked water and additionally add 2 cups of water (total 6 cups & 1:6 rice-to-water ratio for cooking). Bring it to a boil. Once the water starts boiling, add the soaked Mappillai Samba rice to it. 
  • Check the rice texture after 20 minutes of cooking. The rice takes 30-40 minutes to cook completely.
  • Once cooked, turn off the flame and strain the excess water.
  • Let it rest for 5 minutes and serve with your favourite curries, chutneys or dals.
