- 1/2 cup chopped mint leaves (phudina)
- 3 cups chopped cucumber
- 1 1/2 cups low fat curds (dahi)
- salt to taste
- 1/2 cup crushed ice
For The Garnish:
- 4 tbsp finely chopped cucumber
- To make a minty cucumber cooler, combine the cucumber along with ½ cup of water in a deep pan and cook on a medium flame till it turns soft (approx. 4 to 5 minutes).
- Keep aside to cool.
- Once cooled, combine the cucumber (with the remaining water) and mint leaves in a mixer and blend till smooth.
- Transfer the mixture in a deep bowl, add the curds and salt, mix well and keep aside.
- Place some crushed ice in 4 individual glasses and pour equal quantities of the juice over it. Serve the minty cucumber cooler immediately garnished with cucumber.
