NAVARA RICE KANJI

Ingredients:
- ½ cup Navara rice
- ½ cup green moong dal
- 5 cups water
- ¼ cup small onions, crushed
- 1 inch fresh ginger, thinly shredded
- 1 tsp black peppercorns
- ½ tsp turmeric powder

Salt, to taste
Greenchillies- 5 or as needed - 1 tsp cold-pressed oil or desi ghee
- 6–8 curry leaves
Method
- Rinse and soak the Navara for 2 hrs and green moong for 2 hrs.
- In a pressure cooker along with turmeric powder, peppercorns, and a pinch of salt.
- Pour in 5 cups of water and bring it to a boil.
- Close the lid and pressure cook for 5 whistles.
- Allow the pressure to release naturally.
- Open the lid and check for a soft, mushy consistency — perfect for easy digestion.
- Add salt to taste and stir well.
- In a small pan, heat ghee or oil, add asafoetida and curry leaves.
- Toss in the crushed onions and shredded ginger, sauté until soft and aromatic.

Add this tempering to the kanji or serve it on the side based on preference.
