OSAMAN (GUJARATI THIN TOOR DAL SOUP)

Ingredients
- Toor dal – ½ cup
- Ghee – 2 tbsp
- Cloves – 4
- Cinnamon – 2 small sticks
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Curry leaves – 10
- Ginger-green chilli paste – ¼ tsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ¼ tsp
- Kokum – 4 (soaked)
- Jaggery – 3 tbsp
- Salt – to taste
- Water – as required
Method:
- Wash and pressure cook dal with 4 cups water (3–4 whistles). Cool and blend smooth. Add 2 cups water to thin.
- Heat ghee → add cloves, cinnamon, mustard, cumin (sizzle), curry leaves → sauté briefly.

Add dal liquid + ginger-chilli paste, turmeric, chilli powder, kokum, jaggery, salt.
Bring to boil → simmer 10 mins. - Adjust seasoning → serve hot.
