OSAMAN (GUJARATI THIN TOOR DAL SOUP)

 Ingredients

  • Toor dal – ½ cup
  • Ghee – 2 tbsp
  • Cloves – 4
  • Cinnamon – 2 small sticks
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Curry leaves – 10
  • Ginger-green chilli paste – ¼ tsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ¼ tsp
  • Kokum – 4 (soaked)
  • Jaggery – 3 tbsp
  • Salt – to taste
  • Water – as required 

Method:

  • Wash and pressure cook dal with 4 cups water (3–4 whistles). Cool and blend smooth. Add 2 cups water to thin.
  • Heat ghee → add cloves, cinnamon, mustard, cumin (sizzle), curry leaves → sauté briefly.
  • Add dal liquid + ginger-chilli paste, turmeric, chilli powder, kokum, jaggery, salt.
    Bring to boil → simmer 10 mins.
  • Adjust seasoning → serve hot.
