RIDGE GOURD CORIANDER CHUTNEY

Ingredients:

  • Ridge Gourd -250grams
  •  Green chillies-5 no’s
  • Tomato -1 medium chopped
  •  Cumin seeds/jeera-1tsp
  •  Garlic pods – 2 or 3
  •  Coriander leaves -1cup
  •  Fried gram dal – 2tbsp
  • Tamarind a small marble size
  •  Salt to taste
  •  Oil – 2tsp

Method:

  1. Peel and chop ridge gourd
  2. Heat oil → add cumin, garlic, green chilli, coriander leaves → sauté → keep aside.
  3. In the same pan → fry tomato + tamarind (2–3 mins) → keep aside.
  4. Sauté chopped ridge gourd(1 min) → keep aside.
  5. Cool all ingredients.
  6. Grind everything with fried gram dal + salt + little water → coarse paste.
  7. Transfer to bowl.
  8. Heat oil → add mustard seeds, urad dal, curry leaves → temper.
  9. Pour tempering over chutney.
  10. Serve with rice + ghee.
