RIDGE GOURD CORIANDER CHUTNEY

Ingredients:
- Ridge Gourd -250grams
- Green chillies-5 no’s
- Tomato -1 medium chopped
- Cumin seeds/jeera-1tsp
- Garlic pods – 2 or 3
- Coriander leaves -1cup
- Fried gram dal – 2tbsp
- Tamarind a small marble size
- Salt to taste
- Oil – 2tsp
Method:
- Peel and chop ridge gourd
- Heat oil → add cumin, garlic, green chilli, coriander leaves → sauté → keep aside.
- In the same pan → fry tomato + tamarind (2–3 mins) → keep aside.
- Sauté chopped ridge gourd(1 min) → keep aside.
- Cool all ingredients.
- Grind everything with fried gram dal + salt + little water → coarse paste.
- Transfer to bowl.
- Heat oil → add mustard seeds, urad dal, curry leaves → temper.
- Pour tempering over chutney.
- Serve with rice + ghee.
