SAVORY-TANGY KACHAMPULI CARAMELIZED ONION SPREAD

Ingredients
- Onions – 300 g (thinly sliced)
- Bewild Groundnut Oil – 2 tbsp
- Garlic – 4 cloves (finely chopped)
- Kachampuli vinegar – 2 tbsp
- Jaggery (powder) – 2 tbsp (adjust to balance sourness)
- Salt – ½ tsp
- Black pepper – ½ tsp
- Optional: Red chilli flakes or smoked paprika for heat
Method
- Sauté onions in oil on low heat until golden brown & jammy (15 mins).
- Add garlic, stir for 1–2 mins.
- Deglaze with Kachampuli vinegar, let it reduce.
- Stir in jaggery, salt, pepper. Cook till thick and spreadable.
- Cool & store in sterilized jars.
