SAVORY-TANGY KACHAMPULI CARAMELIZED ONION SPREAD

Ingredients

  • Onions – 300 g (thinly sliced)
  • Bewild Groundnut Oil – 2 tbsp
  • Garlic – 4 cloves (finely chopped)
  • Kachampuli vinegar – 2 tbsp
  • Jaggery (powder) – 2 tbsp (adjust to balance sourness)
  • Salt – ½ tsp
  • Black pepper – ½ tsp
  • Optional: Red chilli flakes or smoked paprika for heat

Method

  1. Sauté onions in oil on low heat until golden brown & jammy (15 mins).
  2. Add garlic, stir for 1–2 mins.
  3. Deglaze with Kachampuli vinegar, let it reduce.
  4. Stir in jaggery, salt, pepper. Cook till thick and spreadable.
  5. Cool & store in sterilized jars.
