SWEET & TANGY KACHAMPULI FRUIT RELISH

 Ingredients (for ~250 g relish)

  • Pineapple or Mango – 200 g (diced, ripe but firm)
  • Kachampuli vinegar – 2 tbsp
  • Brown sugar or Jaggery – 50 g (¼ cup, grated or powdered)
  • Fresh ginger – 1 tsp (finely grated)
  • Green chilli – 1 small (finely chopped, adjust to heat preference)
  • Salt – ½ tsp
  • Roasted cumin powder – ½ tsp
  • Water – 2–3 tbsp (to soften fruit while cooking, if needed)

Method

  1. In a pan, cook diced fruit with 2–3 tbsp water on medium heat until slightly soft.
  2. Add ginger, green chilli, salt, and roasted cumin. Mix well.
  3. Stir in jaggery/brown sugar and let it dissolve.
  4. Once the fruit looks glossy and thickened, add Kachampuli vinegar.
  5. Cook for another 2–3 minutes until it reaches a chutney-like consistency.
  6. Cool completely and store in sterilized glass jars.
