SWEET & TANGY KACHAMPULI FRUIT RELISH

Ingredients (for ~250 g relish)
- Pineapple or Mango – 200 g (diced, ripe but firm)
- Kachampuli vinegar – 2 tbsp
- Brown sugar or Jaggery – 50 g (¼ cup, grated or powdered)
- Fresh ginger – 1 tsp (finely grated)
- Green chilli – 1 small (finely chopped, adjust to heat preference)
- Salt – ½ tsp
- Roasted cumin powder – ½ tsp
- Water – 2–3 tbsp (to soften fruit while cooking, if needed)
Method
- In a pan, cook diced fruit with 2–3 tbsp water on medium heat until slightly soft.
- Add ginger, green chilli, salt, and roasted cumin. Mix well.
- Stir in jaggery/brown sugar and let it dissolve.
- Once the fruit looks glossy and thickened, add Kachampuli vinegar.
- Cook for another 2–3 minutes until it reaches a chutney-like consistency.

Cool completely and store in sterilized glass jars.
