Grown within the forest landscapes of Beforest's Poomaale Collective in Coorg, this coffee develops slowly beneath native tree cover, nourished by biodiversity and living soil. Here, every harvest begins as part of a thriving forest ecosystem.
For this lot, freshly harvested cherries undergo a wild lactic fermentation for 4-5 days under carefully controlled conditions. Naturally occurring lactic acid bacteria gently shape the coffee, bringing greater sweetness, a refined texture, and delicate fruity and floral notes before the beans are washed and dried
The beans are then medium roasted to reveal the elegance of the process, bringing together vibrant acidity, a silky mouthfeel, and a clean finish.
