For this lot, ripe cherries are sun-dried whole in the natural process, allowing the fruit to slowly influence the bean as it dries. This traditional approach deepens body and enhances richness without the need for intervention.
The beans are then taken through a dark roast, bringing out boldness and intensity while maintaining structure and smoothness.
