At the Beforest's Poomaale Collective in Coorg, coffee grows within a living forest ecosystem where shade, soil life, and biodiversity shape its character long before processing begins.
For this lot, ripe cherries are dried in a controlled poly house whole for 15-20 days , allowing the fruit to slowly influence the bean as it dries. This traditional approach deepens body and enhances richness without the need for intervention.
The beans are then taken through a dark roast, bringing out boldness and intensity while maintaining structure and smoothness.
Unlike commercial robusta that often feels harsh, this coffee carries weight without aggression, shaped first by forest-grown cultivation, then by a patient drying process, and finally by a roast that brings warmth and depth to the cup.
