Bewild Tomato Pickle is born from abundance and intention. When ripe, seasonal tomatoes arrived in plenty from the Hyderabad Collective, we chose to transform them into something lasting - following a zero-waste approach rooted in traditional preservation.
Taking inspiration from our much-loved seasonal Amla Pickle, this tomato pickle carries forward the same philosophy - using time, care, and process to extend the life of fresh produce.
The tomatoes are first salt-cured, sun-dried, and slowly reduced, allowing their natural tang and depth to intensify. They are then stone-ground along with soaked tamarind, spices, and garlic, and finished with a carefully cooled tempering of oil and seeds. This 5-day process builds layers of flavour while preserving texture - resulting in a pickle that is bold, tangy, and deeply comforting.
Crafted in small batches and handled with care at every step, this is not just a condiment -it’s a way of respecting the harvest and reducing waste, while bringing a familiar, homely flavour to everyday meals.
