At the Beforest's Poomaale Collective in Coorg, coffee grows within a living forest, not in monoculture plantations. Here, Canephora develops slowly under shade, shaped by biodiversity, soil life, and seasonal rhythms.
This lot undergoes a Frozen Cherry process, where freshly harvested cherries undergo anoxic fermentation first and are frozen before drying. This pause in time allows the fruit sugars to remain intact and gradually influence the bean during drying, resulting in a rounder, more integrated cup profile.
Unlike conventional robusta that often leans sharp or aggressive, this method softens edges and brings a smoother structure to the coffee.
The beans are then medium roasted to preserve body while allowing subtle complexity to emerge.
